With the Holidays in full swing I thought this might get some attention.

For the big family gatherings who has a good recipe for BBQ Prime Rib or Turkey

I am sure some of us are meat and potato type..

I am doing a Prime Rib...

My only problem with smoking meat is that it takes so long to do it right and by that time the Captain has me close to smoked also! For prime rib I heat the oven to 450, spray the prime down with olive oil pam, shake some white pepper, onion powder and garlic powder on the fat cap. Put it in at 450 for 15 minutes and turn it down to 300 and cook for 10 minutes a pound and then stick a thermometer in and finish until internal temp is at 135. Do not open the oven until the time has passed and you ready to measure the temp. One thing most do not know, this is how restaurants roast prime. The people that like well done get end caps or an outside cut but there are only so many of those so the more rare meat is held under in the As Ju until it has a dark well done look and maybe stuck in the broiler for a minute or two. They cook it very rare also to use as sandwich meat for the prime not used up on Sat. night. But smoked is good, both meat and meat head.....
